Ce couteau \u00e0 lame d\u2019environs 6 \u00e0 11 cm est le couteau polyvalent par excellence. Ils sont semblables avec leur lame de 20 \u00e0 35 cm de longueur. L\u2019un d\u2019eux est <strong>le couteau de chef<\/strong>, \u00e9galement appel\u00e9 <strong>couteau \u00e9minceur<\/strong>\u00a0; l\u2019autre est son cousin japonais, le <strong>Santoku<\/strong>. Le couteau de chef a une lame l\u00e9g\u00e8rement bomb\u00e9e, contrairement au Santoku. De ce fait, les techniques d\u2019utilisation sont diff\u00e9rentes. Par exemple, pour <strong>\u00e9mincer des l\u00e9gumes<\/strong>, l\u2019une des utilisations principales de ces couteaux, la forme du couteau de chef requiert d\u2019effectuer un mouvement de balancier en gardant la pointe du couteau sur la planche, ce qui peut-\u00eatre un peu difficile \u00e0 prendre en main. Le Santoku, quant \u00e0 lui, requiert de tenir le couteau bien \u00e0 l\u2019horizontale sur le l\u00e9gume et d\u2019effectuer un mouvement en biais vers le bas afin de le trancher.<\/p>\n<p style=\"text-align: justify;\">\u00a0 \u00a0 \u00a0Ces couteaux, dont les possession d\u2019au moins l\u2019un d\u2019entre eux para\u00eet indispensable pour bien d\u00e9buter la cuisine, sont \u00e9galement tr\u00e8s polyvalents. Accompagn\u00e9 de la <strong>fourchette \u00e0 d\u00e9couper<\/strong>, fourchette \u00e0 deux grandes dents qui ressemble \u00e0 un diapason servant \u00e0 maintenir la viande pendant la d\u00e9coupe, vous serez arm\u00e9 pour tous vos repas carnivores. Le premier, dont je n\u2019ai m\u00eame pas \u00e0 pr\u00e9ciser l\u2019utilit\u00e9, n\u2019est autre que le <strong>couteau \u00e0 pain<\/strong>, dont les dents seront sans merci m\u00eame avec la cro\u00fbte la plus dor\u00e9e.<\/p>\n<p style=\"text-align: justify;\">\u00a0 \u00a0 \u00a0Le second est r\u00e9serv\u00e9 aux plus gourmands : il s\u2019agit du <strong>couteau \u00e0 entremets<\/strong>.
