La premi\u00e8re chose \u00e0 savoir est la quantit\u00e9 d\u2019eau \u00e0 utiliser. La r\u00e8gle est simple : un litre pour 100 gramme de p\u00e2tes, ce qui \u00e9quivaut \u00e0 une portion. Une fois que votre eau est \u00e0 \u00e9bullition, ajouter-y 10 grammes de sel par litre d\u2019eau. La r\u00e8gle \u00e0 retenir est donc simple : 1-10-100, soit un litre d\u2019eau et 10 grammes de sel pour une portion de 100 grammes de p\u00e2tes. N\u2019importe quelle <em>mamma<\/em> italienne vous le dirait. Vous \u00eates vous d\u00e9j\u00e0 demand\u00e9 pourquoi les Italiens cuisinent leurs p\u00e2tes al dente\u00a0? Simplement parce que, en Italie, on plonge les p\u00e2tes dans la sauce, directement dans la po\u00eale, et non l\u2019inverse. Verser la sauce sur les p\u00e2tes, comme beaucoup de Fran\u00e7ais le font, ferait s\u2019arracher les cheveux \u00e0 notre <em>mamma<\/em>.
