Je viens de rentrer du march\u00e9, ma salade sous le bras. Il est temps de la pr\u00e9parer ! Je la rince et l\u2019essore convenablement, et en d\u00e9tache les longues feuilles craquantes que je dispose dans mon saladier. Il ne manque que la touche finale, une d\u00e9licieuse sauce vinaigrette pour rehausser le tout. Mais, quelle huile choisir ? Quel vinaigre ? <strong>Comment bien r\u00e9ussir ma vinaigrette<\/strong> ? Je vais rester simple aujourd\u2019hui. Bien que je pourrais pimenter un peu ma sauce en r\u00e9alisant une vinaigrette \u00e9pic\u00e9e ou avec une touche d\u2019alcool, je vais m\u2019en tenir \u00e0 une recette classique. Mais quel huile, et quel vinaigre choisir ? Dans ce cas j\u2019opterais pour un vinaigre plut\u00f4t cors\u00e9, comme le <strong>vinaigre de vin<\/strong> ou de <strong>X\u00e9r\u00e8s<\/strong>. Ces huiles neutres me permettent aussi d\u2019\u00eatre un peu plus cr\u00e9atif et d\u2019ajouter moutarde forte et \u00e9pices.<\/p>\n<p style=\"text-align: justify;\">-Ensuite, choisir une <strong>huile fruit\u00e9e<\/strong>, comme l\u2019<strong>huile d\u2019olive<\/strong>, qui s\u2019accordera \u00e0 merveille avec un <strong>vinaigre balsamique<\/strong> et un jus de citron, ou des huiles \u00e0 l\u2019arachide, la noix ou l\u2019avocat. Ces huiles seront parfaites avec des vinaigres plus doux comme le <strong>vinaigre de vin blanc<\/strong> ou le <strong>vinaigre de cidre<\/strong>. J\u2019ajoute ensuite mon huile. J\u2019en verse deux cuill\u00e8res car j\u2019aime ma vinaigrette bien vinaigr\u00e9e, mais vous pouvez aller jusqu\u2019\u00e0 quatre fois la dose d\u2019huile, le ratio habituellement recommand\u00e9e \u00e9tant trois doses d\u2019huile pour une de vinaigre. J\u2019ajoute une toute petite <strong>pointe de moutarde<\/strong> car j\u2019aime les vinaigrette fortes, bien que je pourrais m\u2019en passer avec une huile fruit\u00e9e comme l\u2019huile d\u2019olive. Elle est en revanche recommand\u00e9e avec une huile neutre. Ajoutez \u00e9galement vos <strong>fruits et l\u00e9gumes<\/strong> cisel\u00e9s, ainsi que <strong>vos herbes et vos \u00e9pices<\/strong>, si vous d\u00e9sirez en ajouter, au dernier moment. Tout est une question de go\u00fbts et d\u2019envies ! Je m\u00e9lange bien le tout et le verse sur ma salade bien fra\u00eeche.
